A couple more:

-Jethro Tull: there are tons of amazing acoustic guitar parts in their songs: "Mother Goose", "My God", "Skating Away" and "Cold Wind to Valhalla", to name but four.

-John McLaughlin: he's got solo albums full of acoustic stuff, plus most of his stuff with Shakti is acoustic, and there are number of acoustic Mahavishnu Orchestra tunes as well. But as far as acoustic work goes, he's best well known for his work in a guitar trio with Paco de Lucia and Al Di Meola (add those names to the list as well): vids of those concerts and sessions are on the web. Here's a great one.

-Baden Powell, if you're interested in Latin stuff.

-Stan Getz, if you're interested in Latin/jazzy stuff.
