Because if you say "I got hit by a little stone," you sound like a sissy. If you say "I got hit by a ROCK!" people know you're a MAN!!!

Now the real answer. Stone is the substance rocks are made of. Saying 'a stone' doesn't really make sense. That would be like calling a popsicle "an ice." A rock is an object made of stone, whereas stone is the substance rocks are made of.
