the body could be typically made of ash, alder, poplar, or basswood. Most likely if it's a fender strat, it will be either ash or alder. In which case, either would be fine. The rosewood will roll off some of the highs causing a darker sound, but to an untrained ear, probably not noticeable enough to matter. It will mainly depend on look and feel. I love both. I like the look and feel of a good rosewood fretboard, because rosewood is an oily wood which makes it feel real smooth. I also like the feel of maple fretboards because they feel real solid and more articulate.
