It's not so much the tuners as what happens to the string as all of that tension goes away then comes back again: what happens is (especially at the nut) that the string moves a little as you push down on the bar, but when you let go again, it doesn't come back exactly the same. Worse, some strings are more off than others.

There's a few tricks you can use to minimise this problem but the only way to fully get around it is a locking trem with a locking nut which, consequently, makes changing strings a royal pain in the heiny.
