may sound rubbish but one of my bands that has female singers in covers a leanne rimes (spelling) song called "But i do love you". its really a bit of a rubbish pop song, but given the right bass line (gotta be simple but have a nice groove to it) and nicely picked/strummed guitar it comes out pretty damn well especially if the singers can harmonize. its simple but always seems popular despite its slighlty embarassing orgin. its not hard just listen to the recordin an you'll soon pick it up.
