is it possible to take of a string (like the high e) move the rest of the strings down, and then add an a string (the 7th string on a 7 string guitar {i think}) for example, and put it on the sixth string location?

that doesnt make any sense. Whatever your thinking of doing i dont think its possible. For a start the neck wouldnt be wide enough for seven strings.

You'll probably have to increase the size of the slot on the nut to fit in the string. You could also put on heavy gauge strings, and then down tune them.

a 6-string neck is not made for the much higher tension of those strings. what you are attempting is to construct a baritone guitar. but those baritones have a longer scale and a neck that is built for higher tension.
its as if you were attemting to put bass-strings on a regular guitar - the neck will either snap or bend. NO GOOD

I was pretty sure the tension was going to get in the way, but wasn't sure.

Not sure if that's what you meant, but Dimebag Darrel (Pantera) replaced his 6th string with a 7th string tuned to Low G, and keeping the first 5 strings as they are and dropped one whole step down... Tuned like this : (Low to high) GGCFAD
He did that on a couple of songs from "The Great Southern Trendkil" album.
