How do these sound. Hows does the classic compare in terms of sound to the LP Custom and Standard?

The classic is in the same boat as the Standard and Custom, i.e. it's a standard with a few little cosmetic differences, but it's no longer in production, so you'd have to get it used.
It doesn't have any difference in tone or anything.

The Epiphone Les Paul Classic also has the 1960's Les Paul slim-tapered neck for fast action with is an feature I really want. Does the Custom Epiphone Les Paul or or any of the other Epi Les Pauls come with the 1960's slim-tapered neck? Thanks!
