Besides the Hirojoshi and other Japanese scales, is it possible to make my classical guitar sound like a Japanese Koto? Maybe by using different tunnings or such that I don't know about.

Only if you mic it up and run it through a POD or even better still, an independent effects processor... it still won't sound like a koto but you may be able to get close to it.
